Appetizer: Hot Corn Dip

Ingredients

  • 5 Ears of Lee’s Corn on the Cob
  • 1 Small Jar Pimento, Drained
  • 1 Bunch Green Onions, Chopped
  • 1 Cup Mayonnaise
  • 1 Cup Sour Cream
  • 1 Tablespoon Garlic Powder
  • 12 oz. Shredded Cheese
  • ¼-½ Jalapeno, Chopped

Directions

  1. Preheat oven to 350 degrees.
  2. Cut kernels off ears of corn.
  3. Set aside a handful of shredded cheese, then mix the rest ingredients together in a large bowl.
  4. Place mixture in a baking dish.
  5. Bake for 20 minutes.
  6. Sprinkle the rest of the cheese on top, then broil until the cheese bubbles.
  7. Serve with corn chips.

Side Dish: Baked Mac and Cheese

Ingredients

  • Lee’s Macaroni and Cheese
  • Shredded Cheddar Cheese
  • Panko Bread Crumbs

Directions

  1. Preheat oven to 350 degrees.
  2. Spread Lee’s macaroni and cheese in a baking dish.
  3. Cover with shredded cheese.
  4. Sprinkle with bread crumbs.
  5. Bake for 30 minutes, or until golden.

Side Dish: Green Bean Casserole

Ingredients

  • Lee’s Green Beans
  • 4 Pieces of Bacon, Slightly Cooked and Chopped
  • ¼ Cup Brown Sugar
  • 2 Tablespoons Butter
  • 1 Tablespoon Soy Sauce or Tamari
  • 1 Teaspoon Garlic Powder

Directions

  1. Preheat oven to 350 degrees.
  2. Place green beans in a casserole dish.
  3. Sprinkle bacon pieces on green beans.
  4. Combine brown sugar, butter, soy sauce and garlic powder and pour over green beans.
  5. Bake for 30 minutes.

Main Course: Roast Chicken Over Greens

Ingredients

  • Lee’s Oven Roast Chicken
  • Watercress
  • Baby Kale
  • Arugula
  • Lemon
  • Sea Salt

Directions

  1. Chop up watercress, baby kale and arugula and place in bowl.
  2. Squeeze lemon over greens and sprinkle with salt, then toss.
  3. Place greens on serving dish, then place warm pieces of roast chicken on top.

Dessert: Pecan Pie Brownies

Ingredients

  • Lee’s Pecan Pie
  • Brownie Mix
  • Vanilla Ice Cream

Directions

  1. Puree Lee’s Pecan Pie in food processor into a paste.
  2. Follow boxed brownie instructions to make brownie batter.
  3. Pour batter into baking dish.
  4. Place dollops of pie puree throughout batter, then swirl with knife to distribute it more evenly.
  5. Bake according to boxed brownie instructions.
  6. Serve with a scoop of vanilla ice cream.
